Mezcal, comes in various forms, each offering unique flavors and production methods. Dive in with us to learn about the differences between three main categories of mezcal: Single Agave, Ensamble, and Pechuga. We'll also highlight five new QuiQuiRiQui additions to the drinks99 portfolio that exemplify these categories.

What's the difference between Mezcals?

1. Single Agave Mezcal

Single Agave mezcal is made from one specific type of agave plant. This category showcases the distinctive characteristics and flavors of that particular agave, allowing connoisseurs to appreciate the nuances of each variety.

Production:

The process involves roasting the agave hearts, crushing them, and fermenting with natural yeasts. Distillation typically occurs in copper pot stills, preserving the purity of the agave's flavor.

Examples:

  • Quiquiriqui Arroqueno: Crafted from the Arroqueno agave, this mezcal is known for its floral and earthy notes, complemented by a touch of sweetness.

  • Quiquiriqui Tobala: Made from the rare Tobala agave, it offers a delicate flavor profile with fruity and floral hints. Its wild growth contributes to its complexity and smoothness.

2. Ensamble Mezcal

Ensamble mezcal, or blend, combines multiple types of agave to create a harmonious flavor profile. This category celebrates the diversity of agave varieties, resulting in a rich and layered drinking experience.

Production:

The production process mirrors that of Single Agave mezcal, with the key difference being the use of multiple agave types. The combination of these agaves allows for a unique expression of flavors that reflects the artistry of the mezcalero.

Example:

  • Quiquiriqui Ensamble: This mezcal blends different agaves, resulting in a complex profile that balances spice, sweetness, and smoky notes. The interplay of various agaves enhances the overall flavor, making it a favorite among mezcal enthusiasts.

    Ensamble: Espadin, Arroqueno, mexicana

3. Pechuga Mezcal

Pechuga mezcal is a special category traditionally made for celebrations. It involves distilling mezcal with fruits, spices, and sometimes even meats, which adds layers of complexity to the final product.

Production:

After the initial distillation, a raw turkey breast (or sometimes other meats) is suspended in the still along with fruits, spices, and the base mezcal. This unique method creates a complex flavor profile that is both bold and aromatic.

Examples:

  • Quiquiriqui Pechuga - Destilado con Café: This mezcal incorporates coffee during the second distillation, resulting in an aromatic spirit with rich coffee and smoky flavors.

  • Quiquiriqui Pechuga - Destilado con Cacao: Infused with cacao, this mezcal offers a sweet and indulgent experience, blending chocolate notes with the smoky essence of mezcal.

Understanding the distinctions between Single Agave, Ensamble, and Pechuga mezcal enhances the appreciation of this diverse spirit. Each category offers a unique tasting experience, showcasing the artistry and tradition behind mezcal production. With the addition of Quiquiriqui Arroqueno, Quiquiriqui Tobala, Quiquiriqui Ensamble, Quiquiriqui Pechuga - Destilado con Café, and Quiquiriqui Pechuga - Destilado con Cacao to our portfolio, we invite you to explore the rich world of mezcal and discover your favorites.
